Wheat is one of the oldes plants on human civilization.  It is originated from Transcaucasia. As at today large varieties of flour types available in the world. The most popular wheat is called bread wheat & it is know as 'Triticum Aestivum. The wheat type and characteristics varies with the seed time between winter and summer. 
Hargest wheat is know as 'Vitreous' and soft one is called 'Floury'. Different industries use different varietis of wheat. 

Characteristics of Wheat

When the wheat is mixed with other ingreadient such as yeast, salt, water is called daugh. The wheat contains different proteins such as 'gliadin', 'glutenin' which gives best elastic, capacity of gas retention & extensible qualities.
